Crock Pot Angel Chicken Recipe

Introduction

Crock Pot Angel Chicken is a creamy, flavorful dish that combines tender chicken breasts with a rich sauce, perfect for an easy weeknight meal. The slow cooker does most of the work, infusing the chicken with a delicious blend of garlic, cream cheese, and Italian seasoning.

A plate filled with a bed of thin yellow spaghetti noodles forms the bottom layer, with creamy white sauce lightly coating the pasta and pooling in some areas. On top, a large piece of grilled chicken breast with a golden brown sear sits to one side, covered partially in the same creamy sauce. Small green herb pieces are scattered over the dish, adding contrast along with a sprinkling of black pepper and red flakes. A silver fork is twirling some noodles near the bottom right of the plate. The plate is placed on a white marbled surface. photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 1-2 Tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)
  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (recommend low or no sodium if sensitive to salt)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (recommend low or no sodium if sensitive to salt)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix (or your favorite mix)
  • 16 ounce box angel hair pasta
  • Chopped fresh parsley, cracked pepper, and/or grated Parmesan cheese (optional for serving)

Instructions

  1. Step 1: Heat a cast iron skillet over medium-high heat. Add vegetable oil and swirl to coat the bottom. Sprinkle salt and pepper over both sides of the chicken breasts.
  2. Step 2: Once the pan is hot, add the chicken breasts and sear each side for 2-3 minutes or until golden brown. Remove from heat.
  3. Step 3: In a medium bowl, whisk together the softened cream cheese and butter until smooth.
  4. Step 4: Add the cream of chicken soup, minced garlic, chicken broth, and Italian seasoning mix to the bowl. Whisk to fully combine.
  5. Step 5: Spray the inside of a crock pot with non-stick cooking spray. Place the seared chicken breasts in the bottom of the pot.
  6. Step 6: Pour the soup mixture over the chicken breasts. Cover and cook on low for 3-4 hours until the chicken reaches an internal temperature of 165°F. For more tender, shreddable chicken, cook longer if desired.
  7. Step 7: Shortly before serving, cook the angel hair pasta according to package instructions until al dente. Drain well.
  8. Step 8: Serve the chicken whole or shredded. You can toss the pasta with the sauce or spoon the chicken and sauce over the pasta on each plate.
  9. Step 9: Optionally, top with chopped parsley, cracked pepper, and grated Parmesan cheese for extra flavor.

Tips & Variations

  • For a lower sodium dish, use low-sodium cream of chicken soup and chicken broth.
  • Try swapping the Good Seasons Italian mix for your favorite herb blend or a bit of dried oregano and basil.
  • Use fresh garlic instead of pre-minced for a brighter garlic flavor.
  • If you prefer, use other thin pasta like spaghetti or linguine in place of angel hair pasta.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a microwave or on the stovetop over low heat, adding a splash of chicken broth to loosen the sauce if needed.

FAQs

Can I use frozen chicken breasts in this recipe?

It’s best to use thawed chicken breasts to ensure even cooking and to reach the safe internal temperature. Using frozen chicken in a crock pot can result in uneven cooking.

Can I prepare this dish without searing the chicken first?

Yes, but searing adds extra flavor and color. If you’re short on time, you can skip this step and place the raw chicken directly in the crock pot with the sauce.

Ingredients

Scale

Chicken and Sauce

  • 12 Tablespoons vegetable oil

Pasta and Garnish

  • 16 ounce box angel hair pasta
  • Chopped fresh parsley, cracked pepper and/or grated Parmesan cheese (optional for serving)

Instructions

  1. Sear the Chicken: Heat a cast iron skillet over medium-high heat and add 1-2 tablespoons of vegetable oil, swirling to coat the pan. Season chicken breasts on both sides with salt and pepper. Place them in the hot skillet and sear for 2-3 minutes on each side until golden brown. Remove from heat.
  2. Prepare the Sauce Mixture: In a medium bowl, whisk together softened cream cheese and unsalted butter until smooth. Add cream of chicken soup, minced garlic, chicken broth, and Italian dressing mix to the bowl, whisking until fully combined.
  3. Arrange Chicken in Crock Pot: Spray the inside of the crock pot with non-stick cooking spray. Place the seared chicken breasts evenly at the bottom of the pot.
  4. Add Sauce and Cook: Pour the prepared creamy sauce evenly over the chicken breasts. Cover and cook on low heat for 3-4 hours, or until the internal temperature of the chicken reaches 165°F. For more tender, falling-apart chicken, cook longer but always verify doneness based on temperature rather than time.
  5. Cook Pasta: Shortly before the chicken is finished, prepare the angel hair pasta according to package instructions until al dente. Drain well.
  6. Serve: Serve the crock pot chicken whole or shredded, spooning the creamy sauce over the angel hair pasta. Optionally, top with chopped fresh parsley, cracked pepper, and grated Parmesan cheese for added flavor and presentation.

Notes

  • Use low or no sodium cream of chicken soup and chicken broth if watching salt intake.
  • Always check the chicken’s internal temperature (165°F) for safety rather than relying solely on cooking time, as crock pot temperatures can vary.
  • Cooking longer than 4 hours on low will make chicken more tender but can cause it to fall apart if you prefer that texture.
  • Optional garnishes enhance flavor but aren’t necessary for the dish.
  • Seared chicken adds extra flavor but can be skipped if short on time; just place raw chicken directly in the crock pot with the sauce.
