Marinated Tomatoes is a simple and flavorful summer recipe featuring ripe tomatoes soaked in a tangy balsamic vinegar and olive oil marinade, enhanced with aromatic herbs and garlic. Perfect as a refreshing side dish, salad ingredient, or elegant topping for grilled meats and bruschetta.

Ingredients

Scale

Tomatoes

  • 4 large ripe tomatoes

Marinade

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Select Tomatoes: Choose large, ripe tomatoes that are firm yet slightly soft. Rinse them thoroughly under cold water and pat dry with a clean towel to remove any moisture.
  2. Slice Tomatoes: Cut the tomatoes into wedges, rounds, or cubes, ensuring that all pieces are of uniform size to allow even marination.
  3. Prepare Tomato Base: Place the sliced tomatoes in a large mixing bowl, making sure there’s enough space to toss them with the marinade later.
  4. Mix Wet Ingredients: In a separate bowl, combine the extra virgin olive oil and balsamic vinegar, which serve as the base of the marinade.
  5. Add Seasonings: Stir in sea salt and freshly ground black pepper to the oil and vinegar mixture for seasoning balance.
  6. Add Aromatics: Incorporate the minced garlic, then add chopped fresh basil and parsley (or dried herbs if fresh aren’t available) for herbal aroma and flavor.
  7. Optional Heat: Add red pepper flakes if you desire a subtle kick of spiciness to the marinade.
  8. Whisk Marinade: Whisk all marinade ingredients together thoroughly to ensure they are well combined.
  9. Combine Tomatoes and Marinade: Pour the marinade over the sliced tomatoes in the bowl and gently toss using a spoon or your hands to evenly coat all tomato pieces.
  10. Cover and Marinate: Cover the bowl with plastic wrap or transfer the contents to a resealable plastic bag, pressing out excess air to keep the tomatoes fresh during marination.
  11. Marinate: Let the tomatoes marinate at room temperature for a minimum of 30 minutes, or up to 2 hours for a more intense infusion of flavors.
  12. Re-toss: After marinating, gently toss the tomatoes again to redistribute the flavorful marinade evenly across all pieces.
  13. Serve: Transfer the marinated tomatoes to a serving dish, optionally drizzling any leftover marinade over the top to enhance presentation and taste.
  14. Enjoy: Serve as a refreshing side dish, a topping for grilled meats, bruschetta, or mixed into summer salads for a burst of flavor.
  15. Store Leftovers: Place any leftover marinated tomatoes in an airtight container and refrigerate for up to 3 days. Before serving leftovers, allow them to come to room temperature for about 15 minutes to restore optimal flavor.

Notes

  • For best flavor, use ripe but firm tomatoes to maintain structure during marinating.
  • You can customize herbs based on preference; oregano or thyme also pair well.
  • Adjust red pepper flakes quantity according to your heat tolerance, or omit for a milder taste.
  • Allowing the tomatoes to marinate longer intensifies the flavor but do not exceed 2 hours to avoid overly mushy texture.
  • Leftover marinade can be used as a dressing for salads or grilled vegetables.
  • This recipe is perfect for summertime when fresh tomatoes are at their peak.
