Instructions

  1. Prepare the filling: In a large mixing bowl, combine the diced chicken, corn, black beans, bell pepper, green onions, and spinach. Stir in the grated cheese, then add chili powder, garlic powder, salt, and ground cumin. Mix everything together thoroughly.
  2. Fill the egg rolls: Fill a small bowl with water to use as glue for sealing the egg rolls. Lay one egg roll wrapper flat on a cutting board. Scoop about 1/3 cup of the chicken filling into the bottom corner of the wrapper.
  3. Fold and roll: Fold up the bottom corner over the filling, then fold in the two side corners so the edges almost meet. Use your fingers to brush water on the exposed edges of the wrapper to seal it tightly. Roll the wrapper upward to enclose the filling completely. Place the formed egg roll on a parchment-lined sheet pan. Repeat with remaining wrappers and filling.
  4. Oil the egg rolls: Lightly brush or spritz olive oil on each egg roll to promote browning and crisping in the air fryer.
  5. Air fry – first side: Arrange the egg rolls in the air fryer basket making sure there is space between each to allow air circulation. Cook at 380°F (193°C) for 5 minutes.
  6. Flip and finish cooking: Using tongs, carefully flip each egg roll over. Brush or spray more olive oil on the top side. Continue to cook for an additional 3 to 5 minutes or until the egg rolls are golden brown and crispy.
  7. Serve: Remove from the air fryer and serve immediately with your favorite dipping sauces.
