  • 18 to 20 Dried Apricots (~160 grams)
  • 1/2 cup + 3 tbsp Desiccated Coconut
  • 1/4 cup Cashews (or any nuts)
  • 1/4 cup Sesame Seeds (Til)
  • 1/8 tsp Cinnamon Powder

Wet Ingredients

  • 1 to 2 tbsp Honey or Maple Syrup (to taste)

Instructions

  1. Roast Nuts and Seeds: In a pan over medium-low heat, roast the cashews for 2-3 minutes while stirring continuously. Add the sesame seeds and continue to roast on low heat until they puff slightly and release their aroma. Turn off the heat and add 1/2 cup of desiccated coconut to the hot pan, mixing well so the coconut roasts in the residual heat. Set aside to cool completely.
  2. Grind Roasted Mixture: Once cooled, transfer the roasted cashews, sesame seeds, and coconut mixture to a food processor or grinder. Pulse grind until it forms a fine powder. Transfer this to a bowl and keep aside.
  3. Prepare Apricots: Roughly chop the dried apricots into smaller pieces to ease blending.
  4. Blend Apricots and Powdered Mixture: Add the chopped apricots to the empty grinder and pulse blend until they start to break down. Add the powdered coconut and nut mixture and blend again until all ingredients combine into a sticky mixture.
  5. Add Sweetener and Flavor: Transfer the mixture to a bowl. Add honey or maple syrup and cinnamon powder (or vanilla extract if preferred). Mix thoroughly with a spatula or spoon. Adjust sweetness according to taste. The mixture should have a pliable, dough-like consistency.
  6. Form Balls: Scoop about 1 to 2 tablespoons of the mixture and roll between your palms to form smooth balls. Roll each ball in the remaining desiccated coconut to coat. Repeat with the rest of the mixture to yield 10-12 bliss balls.
