  • 23 teaspoons jarred capers, drained
  • Salt and pepper, to taste

Instructions

  1. Prepare Tomatoes: Dice the tomatoes into small bite-sized pieces and place them in a medium-sized mixing bowl.
  2. Add Aromatics: Finely dice the red onion, chop the basil, and mince the garlic. Add all to the bowl with tomatoes.
  3. Prepare Artichokes: Completely drain the quartered artichoke hearts, discard any tough leaves or parts, and finely dice the remaining artichokes before adding to the bowl.
  4. Add Capers: Drain 2-3 teaspoons of jarred capers and add them to the mixing bowl.
  5. Combine and Season: Toss all ingredients together with salt and pepper to taste, mixing well until evenly combined.
  6. Serve: Serve the salsa with tortilla chips. It can be enjoyed at room temperature or chilled in the fridge before serving.
