Ingredients

Scale

For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 12 tsp sriracha (adjust to taste)
  • 1 tsp honey (optional)
  • 1 clove garlic, minced

For the Bowl:

  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • 2 green onions, sliced
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat the Pan: Heat olive oil in a skillet over medium heat to prepare for cooking the chicken evenly and prevent sticking.
  2. Cook the Chicken: Season the bite-sized chicken pieces with salt and black pepper. Cook in the heated skillet for 6–8 minutes, turning occasionally, until the chicken is golden brown and fully cooked through.
  3. Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and minced garlic until smooth and well combined to create a spicy, tangy sauce.
  4. Toss Chicken with Sauce: Drizzle half of the Bang Bang sauce over the cooked chicken pieces and toss them to coat evenly, infusing them with flavor.
  5. Assemble the Bowl: Place the cooked rice as the base in serving bowls. Layer with the coated chicken, shredded carrots, sliced cucumber, shredded red cabbage, and sliced green onions for a colorful, nutritious bowl.
  6. Add Remaining Sauce: Drizzle the remaining Bang Bang sauce over the top of the assembled bowls to add extra flavor and spice.
  7. Garnish and Serve: Sprinkle with sesame seeds and fresh cilantro if desired. Serve the chicken bowls immediately while warm for the best taste and texture.

  • Fresh cilantro and sesame seeds are optional but add a nice touch of flavor and presentation.
  • This recipe can be made gluten-free by ensuring the sweet chili sauce and sriracha used do not contain gluten.
