Instructions

  1. Prepare the bang bang sauce: In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and rice vinegar. Mix thoroughly and set aside to let the flavors meld.
  2. Cook the chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper to taste, and cook for 5–6 minutes until the chicken is browned and cooked through. Remove from the pan and set aside.
  3. Scramble the eggs: In the same pan, pour in the beaten eggs and scramble until just set. Remove the cooked eggs and set aside with the chicken.
  4. Sauté vegetables: Add a little more oil if needed, then sauté the diced carrots and minced garlic for 2–3 minutes until softened and fragrant. Stir in the green peas and cook for an additional minute to warm through.

  6. Combine chicken and eggs: Return the cooked chicken and scrambled eggs to the pan. Stir everything together evenly. Add 2 to 3 tablespoons soy sauce and mix well to distribute the seasoning.
  7. Add the bang bang sauce: Pour the prepared bang bang sauce over the rice mixture. Stir thoroughly until all ingredients are well coated and heated through.
