For the Toffee:
- 1 cup (2 sticks) unsalted butter
- 1 cup granulated sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons water
For the Topping:
- 1 cup semi-sweet or milk chocolate chips
- ½ cup chopped pecans, walnuts, or almonds
- Prepare Your Pan & Ingredients: Line a 9×13-inch baking dish or baking sheet with parchment paper or a silicone baking mat. Measure out all your ingredients and have them ready as the toffee-making process moves quickly.
- Make the Toffee Base: In a heavy-bottomed saucepan, combine the butter, granulated sugar, salt, and water. Melt over medium heat, stirring constantly with a wooden spoon or silicone spatula. Continue cooking and stirring often until the mixture reaches a deep golden brown and 300°F (hard crack stage) on a candy thermometer, about 10-15 minutes. Remove from heat and stir in the vanilla extract.
- Pour & Spread: Immediately pour the hot toffee mixture onto the prepared baking sheet. Spread it out evenly with a spatula. Let it sit for 1-2 minutes until it begins to firm up slightly but is still warm enough for toppings.
- Add the Chocolate: Sprinkle the chocolate chips evenly over the warm toffee. Let them sit for about 2 minutes so they melt, then spread the melted chocolate evenly with a spatula to create a smooth layer.
- Sprinkle the Nuts: While the chocolate is still melted, evenly sprinkle the chopped nuts over the top. Gently press them into the chocolate so they stick well.
- Let It Set & Break Into Pieces: Allow the toffee to cool and harden at room temperature for 2 hours or place it in the refrigerator for 30 minutes to speed up the process. Once fully set, break the toffee into bite-sized pieces and enjoy your delicious treat!
Notes
- Ensure you use a candy thermometer to reach the precise temperature of 300°F for perfect toffee texture.
- Use fresh butter and good-quality chocolate for best flavor results.
- You can substitute nuts with your favorite variety or omit them to keep the toffee nut-free.
- Store toffee pieces in an airtight container at room temperature for up to two weeks or refrigerate for longer freshness.
- Be very careful when working with hot sugar mixtures to avoid burns.
