  • 4 large burrito-size flour tortillas
  • 3 cups shredded cheese of choice

Instructions

  1. Preheat and Cook Chicken: Preheat your griddle to medium heat. Add your chosen cooking oil along with the chicken thighs seasoned generously with kosher salt, pepper, and BBQ seasoning blend. Cook the chicken for about 6 minutes, stirring a few times with spatulas to ensure even cooking.
  2. Add Sauces and Finish Chicken: Stir in the BBQ sauce and hot honey into the chicken on the griddle. Continue cooking for an additional 2 minutes, mixing well to combine all the flavors. Once done, remove the chicken and clean the griddle surface. Reduce the heat to medium-low for the quesadillas.
  3. Prepare Quesadillas on Griddle: Add more cooking oil to the griddle and lay the burrito-size tortillas flat. On one half of each tortilla, sprinkle half of the shredded cheese. Layer the cooked chicken on top, then drizzle with extra BBQ sauce and hot honey. If using, add chopped cilantro and finish with remaining cheese.
  4. Cook and Fold Quesadillas: Fold the empty side of each tortilla over the filled side, pressing gently. Cook each quesadilla for about 1-2 minutes per side, or until the cheese melts completely and the tortilla crisps to your preference. Use a spatula to carefully flip them.
