  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer gently for 5 minutes until the blueberries soften and release their juices.
  2. Thicken the Compote (Optional): If using cornstarch, dissolve it in a tablespoon of water and stir into the blueberry mixture. Cook for another minute until the mixture thickens. Remove from heat and allow it to cool completely.
  3. Mix Yogurt Base: In a bowl, combine Greek yogurt and vanilla extract until smooth. Taste and adjust sweetness by adding more honey or maple syrup if desired.
  4. Fill Molds: Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full.
  5. Add Blueberry Swirl: Place a spoonful of the cooled blueberry compote on top of each yogurt portion. Using a toothpick, gently swirl the compote into the yogurt to create a beautiful marbled effect.
  6. Freeze: Transfer the molds to the freezer and freeze for at least 3 hours or until solid.
  7. Serve and Store: Remove the frozen bites from the molds and store them in an airtight container in the freezer. Let them sit at room temperature for 2-3 minutes before eating for the best texture.
