Brownie Base

  • 1 cup Butter, melted

  • 3 large Eggs (divided between brownie and cheesecake layers)
  • 1 tsp Salt (divided between both layers)

Cheesecake Layer

  • 8 oz Cream cheese, softened
  • 1/2 cup Sour cream (optional, for added richness)
  • 1 tsp Vanilla extract
  • Additional granulated sugar from the 1 1/4 cups allocated
  • Remaining eggs from the 3 large eggs total

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Grease a 9-inch baking pan with butter or line it with parchment paper to prevent sticking.
  2. Make the Brownie Base: In a bowl, combine melted butter, part of the granulated sugar, cocoa powder, and eggs. Mix in the all-purpose flour, baking powder, and salt until the batter is smooth and well combined. Pour the brownie batter evenly into the prepared pan and bake for 20–25 minutes. Insert a toothpick to check doneness; it should come out with a few moist crumbs. Remove from oven and allow to cool slightly.
  3. Prepare the Cheesecake Layer: While the brownie is cooling, beat the softened cream cheese with the remaining sugar and eggs until smooth and creamy. Add vanilla extract and sour cream (if using) and beat until fully incorporated.
  4. Assemble the Layers: Once the brownie layer has cooled but is still slightly warm, pour the cheesecake mixture over the brownie base in the pan. Use a spatula to smooth the cheesecake layer’s surface evenly.
  5. Bake the Combined Dessert: Return the pan to the oven, reduce the temperature to 325°F (160°C), and bake for 35–40 minutes. The cheesecake should be set but still have a slight jiggle in the center when done.
  6. Cool and Chill: Remove from oven and allow the brownie cheesecake to cool to room temperature. Then refrigerate for at least 4 hours or preferably overnight to fully set and enhance flavors.
