  • 12 teaspoons of water (as needed to thin the batter)

Instructions

  1. Prepare the Batter: In a mixing bowl, combine the creamy peanut butter, the large egg, cocoa powder, pinch of salt, monkfruit sweetener, and 1 tablespoon of the semi-sweet chocolate chips. Stir well until all ingredients are fully incorporated into a thick batter.
  2. Adjust Consistency: If the batter is too thick for your waffle maker, gradually add 1 to 2 teaspoons of water to thin it out, mixing thoroughly until you achieve a smooth, spreadable consistency suitable for pouring.
  3. Preheat Waffle Maker: Preheat your mini waffle maker according to the manufacturer’s directions to ensure it reaches optimal cooking temperature for perfect waffle texture.
  4. Cook the Waffles: Pour half of the batter into the preheated waffle iron. Immediately sprinkle half of the remaining 1/2 tablespoon of chocolate chips on top of the batter for added gooeyness and chocolate flavor.
  5. Cook Until Done: Close the waffle maker and cook for 2 to 3 minutes, or until there is no steam emerging from the machine, indicating that the waffle is cooked through and has a slightly crisp exterior.
