Filling
- 2 cups (280 g) rotisserie chicken, finely diced
- 4 ounces cream cheese, softened
- ¼ cup buffalo sauce, plus extra for serving
- 1 cup (113 g) sharp cheddar cheese, shredded
- 1 cup (113 g) mozzarella cheese, shredded
- 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix
Assembly

- Water, for sealing wrappers

- Prepare the filling. In a large bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded sharp cheddar cheese, shredded mozzarella cheese, and dry ranch seasoning mix. Stir thoroughly until all ingredients are well mixed.
- Assemble the egg rolls. Working with one egg roll wrapper at a time, place about ⅓ cup of the chicken mixture in the center of the wrapper. Lightly wet the edges of the wrapper with water to help seal.
- Roll the egg rolls. Fold the bottom corner of the wrapper up to cover the filling, then fold in the left and right corners toward the center. Press gently to seal. Continue rolling the wrapper tightly until the filling is fully enclosed and the edges are sealed to prevent filling from leaking out.
- Preheat the air fryer. Set the air fryer to 400°F (204°C) and allow it to preheat while you prepare the egg rolls.
- Cook the egg rolls. Place the egg rolls in the air fryer basket in a single layer, working in batches if needed. Spray the tops of the egg rolls lightly with nonstick cooking spray. Air fry for 3 to 4 minutes, then carefully flip them over, spray the other side with cooking spray, and air fry for another 3 to 4 minutes or until the egg rolls are golden brown and crispy.
- Serve. Remove the egg rolls from the air fryer and serve hot with ranch or blue cheese dressing and additional buffalo sauce for dipping.
