  • ½ pound lean ground beef
  • ½ cup diced yellow onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoons taco seasoning

  • 8 ounces Colby jack cheese, shredded

Chips

  • 12 ounces bag of tortilla chips (Tostitos brand – use about of the bag)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 450°F (232°C). Spray a 12-cup capacity bundt pan generously with cooking spray and set aside to ensure easy removal of the nachos later.
  2. Cook Ground Beef Mixture: Heat a large skillet over medium-high heat and add the lean ground beef, diced yellow onion, salt, and pepper. Cook for 6 to 7 minutes, stirring occasionally, until the beef is browned and no pink remains. Drain off any excess fat to keep the mixture lean.
  3. Add Seasoning: Return the skillet to medium heat and stir in the water and taco seasoning. Cook for another 2 to 3 minutes, allowing the liquid to mostly evaporate and the flavors to meld. Remove the skillet from heat.
  4. Layer First Half: Into the prepared bundt pan, layer half of the shredded Colby jack cheese evenly on the bottom. Next, add half of the cooked beef mixture, spreading it out evenly. Top with about one-third of the tortilla chips, gently distributing them without packing them down.
  5. Layer Remaining Ingredients: Add the remaining cheese on top of the chips, followed by the rest of the ground beef mixture. Finish by adding another one-third of the tortilla chips as the top layer, keeping the layers balanced but not overfilled.
  6. Bake: Place the bundt pan in the preheated oven and bake for 10 minutes, or until the cheese is melted and bubbly.
  7. Invert and Serve: Carefully remove the nachos from the oven. Place a large, heatproof plate over the bundt pan and invert the pan so that the nachos transfer onto the plate in a ring shape. Gently lift the pan away. If any cheese sticks to the pan, replace it back onto the nachos.
  8. Add Garnishes and Serve Warm: Top with optional garnishes such as sour cream, diced tomatoes, and chopped fresh cilantro for added freshness and flavor. Serve immediately while warm for the best texture and taste.
