For the Bowls:

  • 23 medium potatoes
  • 2 tablespoons olive oil, divided
  • 500 grams lean beef mince/ground beef
  • Lettuce, shredded
  • Cheese, dairy-free or regular, sliced or shredded
  • Pickle slices

For the Burger Sauce:

  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard or yellow mustard
  • 1 teaspoon pickle juice from the jar of pickles
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Prepare Spice Mix: In a small bowl, thoroughly mix together the smoked paprika, garlic powder, onion powder, dried oregano (or mixed herbs), salt, and black pepper. Set this aside for seasoning the potatoes and beef later.
  2. Prepare Potatoes: Wash and cut the potatoes into chip shapes. Pat them dry using paper towels to remove excess moisture. Place the chips into a large mixing bowl and add 1 tablespoon of olive oil. Sprinkle half of the prepared spice mix over the potatoes and toss well to ensure each chip is evenly coated with oil and spices.
  3. Cook Potatoes: Spread the seasoned potato chips evenly on a baking tray in a single layer. Bake them in a preheated oven at 200°C (390°F) for 30–40 minutes until they become golden brown and crispy. Alternatively, you can cook them in an air fryer for about 20 minutes for a quicker option, shaking or turning halfway through to ensure even cooking.
  4. Cook Beef: While the potatoes are cooking, heat the remaining 1 tablespoon of olive oil in a frying pan over high heat. Add the lean ground beef and use a wooden spoon to break it up into crumbles. Allow it to brown fully, then sprinkle the remaining half of the spice mix over the meat. Continue cooking until the beef is deeply browned and any excess moisture has evaporated, ensuring a rich, concentrated flavor.
  5. Make Burger Sauce: In a small bowl, combine mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika. Mix until smooth and well combined. Taste and adjust seasoning if needed to balance tanginess and spice.
  6. Assemble Bowls: Once the potatoes are cooked, evenly divide them among your serving bowls. Fill the remaining space in each bowl with shredded lettuce, then add the cooked spiced beef mince. Top each bowl with cheese slices or shreds, and add pickle slices. Finally, drizzle the homemade burger sauce generously over the top. Serve immediately and enjoy your flavorful burger bowls!
