Butternut Squash

  • 2 sprigs fresh rosemary (chopped)
  • 2 sprigs fresh thyme (chopped)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the butternut squash.
  2. Prepare Squash: Peel and cube the butternut squash into bite-sized pieces. Toss the cubes with 2 tablespoons of extra virgin olive oil, salt, and pepper then spread evenly on a baking sheet.
  3. Roast Squash: Roast the squash in the preheated oven for 25-30 minutes, or until golden brown and tender, stirring halfway through for even cooking.
  4. Season Steak: While the squash is roasting, season the steak with salt, pepper, chopped rosemary, and thyme. Allow it to sit at room temperature for 15 minutes to absorb the flavors.
  5. Sear Steak: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side until it reaches your desired level of doneness. Remove from heat and let it rest for a few minutes before slicing.
