Ingredients

Scale

Pie Crust

  • 1 recipe homemade pie crust (use half)

Filling

  • 2 Roma tomatoes, sliced into 12 thin slices (about ¼-inch each)
  • 8 ounces fresh mozzarella, sliced
  • ½ cup (12 g) fresh basil leaves

Egg Wash

  • 2 large eggs, room temperature
  • ¼ cup (59.5 g) heavy whipping cream
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out dough: On a lightly floured surface, roll out the homemade pie dough into about a 14-inch circle. Carefully transfer the dough to the lined baking sheet.
  3. Arrange the filling: Starting in the center of the dough, arrange the sliced tomatoes, mozzarella, and basil in overlapping circles, leaving 2-3 inches of dough exposed around the edges.
  4. Fold edges of dough: Fold the exposed edges of the dough over the filling to create a rustic, pleated crust, forming a galette shape.
  5. Prepare egg wash: In a medium bowl, whisk together the eggs, heavy whipping cream, kosher salt, and black pepper until smooth.
  6. Apply egg wash: Brush the exposed dough edges with the egg wash, then pour the remaining mixture evenly over the tops of the tomatoes, mozzarella, and basil to enrich and set the filling.
  7. Bake: Bake the galette for 35-40 minutes, or until the crust is golden brown and the filling is bubbly but set.
  8. Cool and serve: Remove the galette from the oven, let it cool for about 5 minutes, then slice and serve warm for best flavor and texture.

Notes

  • For best results, use fresh, ripe Roma tomatoes for vibrant flavor and texture.
  • You can substitute store-bought pie crust if you prefer a quicker preparation.
  • Letting the galette cool slightly helps the filling set and makes it easier to slice.
  • This galette can be served warm or at room temperature, making it great for entertaining.
  • To make it vegetarian, ensure the pie crust contains no animal fats if needed.
