Soup Base
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
Main Ingredients
- 2 boneless, skinless chicken breasts, diced
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
Spices and Seasoning

- Saute Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, and chopped red bell pepper. Cook until vegetables are softened and fragrant, about 5 minutes.
