Ingredients

Scale

Protein

  • 34 boneless, skinless chicken breasts

Noodles

  • Lo Mein noodles (fresh or dried), quantity as per package instructions for 4 servings

Vegetables

  • 1 red bell pepper, sliced into bite-sized pieces
  • 1 yellow bell pepper, sliced into bite-sized pieces
  • 2 carrots, thinly sliced
  • 2 green onions, chopped

Sauce and Seasoning

  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic, minced

Instructions

  1. Prepare Ingredients: Gather all ingredients. Chop the red and yellow bell peppers, carrots, and green onions into bite-sized pieces. Set aside.
  2. Cook Noodles: Cook lo mein noodles according to the package instructions until they are al dente. Drain thoroughly and set aside to avoid sticking.
  3. Sauté Chicken: Heat a large skillet or wok over medium-high heat. Add oil and sauté the chicken breasts until they develop a golden brown color and are fully cooked through, approximately 6 to 8 minutes. Remove the chicken from the skillet and set aside.
  4. Stir-Fry Vegetables: In the same skillet, add the bell peppers, carrots, and green onions. Stir-fry these vegetables until they become tender but still crisp, about 3 to 4 minutes.
  5. Combine and Season: Return the cooked chicken to the skillet with the vegetables. Add the cooked lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together thoroughly to ensure the flavors are evenly distributed and heated through.
  6. Serve: Serve the chicken lo mein hot. Optionally, provide extra soy sauce on the side for added seasoning.

Notes

  • Using fresh lo mein noodles gives a better texture, but dried noodles work well too.
  • To reduce sodium, opt for low-sodium soy sauce.
  • Add additional vegetables like snap peas or mushrooms for extra nutrition and flavor.
  • Make sure not to overcook the vegetables to retain their crispness and vibrant color.
  • This dish reheats well for leftovers and can be stored in the refrigerator for up to 3 days.
