These Chocolate Chip Cherry Bars offer a delightful combination of chewy blondie texture with bursts of juicy cherries and rich semi-sweet chocolate chips. Perfect as a sweet treat for any occasion, they are easy to make and deliciously satisfying.

Ingredients

Scale

Wet Ingredients

  • 1/2 cup unsalted butter (melted, 1 stick)
  • 1 cup light brown sugar (packed)
  • 1 large egg
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt (optional)

Add-ins

  • 3/4 to 1 cup semi-sweet chocolate chips
  • 1 cup cherries (fresh or frozen, unhalved)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line an 8-by-8-inch baking pan with aluminum foil and spray it with cooking spray to prevent sticking. Set aside.
  2. Melt butter: Place the unsalted butter in a medium microwave-safe bowl and melt it in the microwave for about 60 seconds until fully liquid.
  3. Combine sugar and butter: Add the packed light brown sugar to the melted butter and stir until the mixture is smooth and well combined.
  4. Add egg and vanilla: Beat in the large egg and vanilla extract until incorporated. Then add the all-purpose flour and optional salt, stirring just until the batter comes together. Avoid overmixing to keep the bars tender.
  5. Fold in chocolate chips and cherries: Gently fold in the semi-sweet chocolate chips and whole cherries, ensuring they are evenly distributed throughout the batter.
  6. Bake the bars: Pour the batter into the prepared pan and smooth the top lightly with a spatula or offset knife. Bake for 27 to 32 minutes, or until the edges start to pull away from the sides of the pan and the center is set but still soft.
  7. Cool and serve: Let the bars cool in the pan for at least 1 hour before slicing them into squares. Store leftovers in an airtight container at room temperature or refrigerated for up to 1 week, or freeze for up to 3 months.

Notes

  • Using unhalved cherries provides a chunky texture and juicy bursts in each bite.
  • Ensure not to overmix the batter to avoid tough blondies.
  • Frozen cherries can be used but do not thaw before folding into batter to prevent excess moisture.
  • Line the pan with foil for easier removal and cleanup.
  • Check doneness by looking for edges pulling away and a set center, avoid overbaking to keep bars moist.
