Main Ingredients
- 170g smooth peanut butter
- 2 tbsp coconut oil (omit if using runny peanut butter)
- 60ml maple syrup
- 80g cornflakes or crunchy cereal of choice
- Pinch of salt
For the Coating
- 150g dark chocolate
- 1 tsp coconut oil
- Combine Ingredients: Add the peanut butter, coconut oil (if using), maple syrup, and a pinch of salt into a saucepan. Heat gently over a low flame, stirring occasionally, until all ingredients have softened and blended together smoothly.
- Mix in Cornflakes: Remove the saucepan from heat. Fold in the cornflakes carefully until they are evenly coated with the peanut butter mixture, ensuring the crunchiness remains intact.
- Shape and Freeze: Transfer the mixture into moulds of your choice (small round moulds are ideal) or press the mixture into a loaf tin lined with baking paper for a bar shape. Place in the freezer and allow to set for about 2 hours or until firm.
- Prepare Chocolate Coating: Break up the dark chocolate into a heat-proof dish and add the coconut oil. Melt the chocolate gently either in the microwave (checking and stirring every 10 seconds to prevent burning) or using a double boiler method.
- Coat the Bites: Dip the set cornflake bites or sliced bars (if using a loaf tin) into the melted chocolate. Place the chocolate-coated bites on a baking sheet lined with baking paper.
- Set Chocolate and Store: Transfer the coated bites to the refrigerator until the chocolate has fully set. Store the finished bites in an airtight container in the freezer, removing them about 20 minutes before serving for the best texture and flavor.
Notes
- For a runnier peanut butter, omit the coconut oil to avoid excess liquid in the mixture.
- Use crunchy cereal alternatives if you prefer a different texture or flavor to cornflakes.
- Make sure the chocolate is melted gently to avoid burning, which can spoil the taste and texture.
- Store the bites in the freezer to maintain firmness and enjoy them slightly softened at room temperature.
- Adjust sweetness by varying the amount of maple syrup according to taste.
