  • 40g (about ½ cup) oat flour
  • 1 tbsp maple syrup or honey
  • 1 whole egg
  • ¾ cup egg whites
  • Splash of milk (optional, if needed to thin batter)
  • Oil or butter for cooking

Filling

  • ⅓ cup Greek yogurt
  • 1 tsp erythritol (or sweetener of choice)
  • ⅓ tsp cinnamon
  • Splash of milk (optional, to thin filling)

Topping

  • 1 tsp erythritol
  • ⅓ tsp cinnamon

Instructions

  1. Prepare the Batter: In a bowl, whisk together oat flour, maple syrup, whole egg, and egg whites until smooth. For an extra smooth texture, you can blend the batter briefly. Add a splash of milk if the batter is too thick to spread easily.
  2. Cook the Crepes: Heat a nonstick skillet over medium heat and lightly grease with oil or butter. Pour about ⅓ cup of batter into the skillet and swirl to evenly coat the bottom. Cook each crepe for 1–2 minutes on each side until set and lightly golden. Repeat until all batter is used.
  3. Make the Filling: In a small bowl, mix Greek yogurt, erythritol, and cinnamon thoroughly. Add a splash of milk if needed to loosen the mixture to a spreadable consistency.
  4. Assemble the Crepes: Spread the cinnamon-yogurt filling evenly over each cooked crepe. Carefully roll each crepe up like a cinnamon roll to encase the filling inside.
  5. Add the Topping: Combine the remaining erythritol and cinnamon then sprinkle this mixture generously over the rolled crepes for a sweet and aromatic finish.

Notes

  • You can substitute maple syrup with honey or any other natural sweetener you prefer.
  • Erythritol can be replaced with any sweetener of choice, or omitted if you prefer less sweetness.
  • Use a nonstick pan and medium heat to prevent the crepes from sticking or burning.
  • If the batter is too thick, add milk a teaspoon at a time to reach desired consistency.
