Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and prepare a 9×9-inch baking dish by greasing it or lining it with parchment paper.
  2. Mix batter: In a mixing bowl, beat one egg. Add sugar, milk, salt, oil, and vanilla extract, mixing well to combine all ingredients evenly.
  3. Add dry ingredients: Spoon the flour into a measuring cup, then add it all at once over the wet ingredients, sprinkling the baking powder on top of the flour before gently mixing to combine. Stir everything into a smooth batter.
  4. Pour batter: Transfer the batter into the prepared baking dish, spreading it evenly.
  5. Prepare streusel: In a microwave-safe bowl, melt the butter. Remove and stir in brown sugar, cinnamon, and flour until well combined. Add chopped walnuts if using.
  6. Add streusel topping: Sprinkle the streusel evenly over the batter. Use a finger or a small wooden spoon handle to poke the streusel halfway down into the batter about 12-18 times, creating pockets of cinnamon flavor throughout the cake.
