Instructions

  1. Prepare the coffee: Brew 2 cups of espresso or a strong coffee and let it cool to room temperature. Set aside while preparing the mascarpone cream.
  2. Make the mascarpone mixture: In a large mixing bowl, combine the mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Using an electric hand mixer, blend until the mixture is smooth and well combined.
  3. Add pumpkin puree and vanilla: Incorporate the pumpkin puree and vanilla extract into the mascarpone mixture, mixing until fully combined and uniform in color.
