Ingredients

Scale

Chickpeas

  • 3 (15 oz) cans organic low sodium garbanzo beans (1 can per flavor)

Oils and Syrup

  • 12 tbsp olive oil
  • 1 tbsp maple syrup

Spices

  • ½ tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • ½ tsp salt
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the chickpeas.
  2. Drain and Rinse: Drain the garbanzo beans using a strainer and rinse them thoroughly under running water.
  3. Dry Chickpeas: Spread the chickpeas on a clean kitchen towel and pat them dry, removing any loose skins. Let them air dry completely to ensure they crisp up when roasted.
  4. Prepare Baking Sheet: Line a rimmed baking sheet with a silicone baking mat or parchment paper. If using parchment, lightly spray it with cooking oil like avocado oil to prevent sticking.
  5. Arrange Chickpeas: Spread the dried chickpeas evenly across the baking sheet in a single layer.
  6. Initial Roast: Roast the chickpeas in the oven for 20-30 minutes, stirring every 10 minutes to ensure even browning, until they turn golden brown and crisp.
  7. Make Spice Mixes: While roasting, combine all the different spices (cinnamon, garlic powder, onion powder, dried dill, dried parsley, salt, chili powder, ground cumin, paprika, cayenne pepper, and additional garlic and salt) in small bowls designated for each flavor.
  8. Divide Chickpeas: Once roasted, while still hot, separate the chickpeas evenly into three bowls for each flavor: sweet, ranch, and spicy.
  9. Coat Ranch and Spicy: For the ranch and spicy bowls, add ½ to 1 tablespoon of olive oil into each and toss the chickpeas to coat them evenly.
  10. Add Spices to Ranch and Spicy: Add the respective spice mix to the ranch and spicy chickpea bowls and toss again until thoroughly coated.
  11. Season Sweet Chickpeas: For the sweet chickpeas, pour the maple syrup and cinnamon mixture over them and toss to coat evenly.
  12. Final Bake for Sweet: Return the sweet-coated chickpeas to the oven and bake for an additional 5-10 minutes to set the syrup and enhance crispiness.

Notes

  • Ensure chickpeas are completely dry before roasting for maximum crispiness.
  • Stirring the chickpeas every 10 minutes prevents burning and promotes even roasting.
  • Adjust the amount of olive oil on the ranch and spicy chickpeas depending on your taste preference for richer flavor or lighter crisp.
  • The maple syrup coating for the sweet chickpeas may cause slight caramelization—watch closely to avoid burning during the final bake.
  • Store cooled roasted chickpeas in an airtight container to maintain crispness.
