Ingredients

Scale

Dough Ingredients

  • 1 1/4 cups water
  • 5 tablespoons chilled unsalted butter
  • 2 packed tablespoons brown sugar
  • 1/2 teaspoon fine salt
  • 1 1/4 cups plain flour
  • 1 teaspoon vanilla essence
  • 2 large eggs
  • 2 tablespoons butter, melted (for brushing before adding sugar)

Cinnamon Sugar Mixture

  • 1/3 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Dough: In a saucepan over medium heat, combine water, butter, brown sugar, and fine salt. Bring to a simmer, then add the flour all at once. Stir constantly for about 5 minutes until a soft, sticky dough ball forms and a starchy film appears on the pan bottom. Continue stirring for another minute while scraping the film to incorporate it into the dough.
  2. Cool and Incorporate Eggs: Transfer the dough to a bowl and let it cool for about 10 minutes. Add the vanilla essence, then add eggs one at a time, mixing thoroughly with a spatula after each. Though it may look separated initially, continue until the dough becomes smooth and sticky.
  3. Prepare for Piping and Baking: Preheat oven to 425°F (220°C) and line two baking sheets with silpat mats or parchment paper. Fit a pastry bag with a star tip (such as number 356) and pipe 3 to 4-inch ropes onto the sheets, leaving space between each. Use a knife to cut the dough after each pipe.
  4. Bake the Churros: Lightly spray the churros with vegetable oil and mist the pan with water. Bake for 20–25 minutes until puffed and golden on the edges. After baking, turn off the oven and leave the door slightly ajar for 10 minutes to let the churros rest and crisp up further.
  5. Finish with Cinnamon Sugar: Remove churros from oven. Brush each lightly with melted butter, then place into a bag with the cinnamon sugar mixture and toss gently to coat. Repeat until all churros are evenly coated for a sweet, cinnamon finish.

Notes

  • Use chilled butter to achieve the best dough texture.
  • Be patient when mixing eggs; the dough changes texture and becomes smooth eventually.
  • Piping with a star tip gives churros their classic ridged appearance and texture.
  • Leaving the oven door slightly open after baking helps keep churros crisp.
  • For best results, consume churros shortly after coating in cinnamon sugar for maximum freshness.
