  • 4 cups low sodium beef broth
  • 2 cups water
  • 2 cups reginetti pasta (or broken lasagna noodles, about 5 oz)

Instructions

  1. Heat Oil and Brown Beef: In a large pot over medium-high heat, heat the olive oil for 3 minutes. Add the ground beef and cook for about 10 minutes until browned and fully cooked.
  2. Sauté Onion and Garlic: Add the minced onion and garlic to the browned beef. Sauté for 2-3 minutes until the onions and garlic become translucent and fragrant.
  3. Add Tomatoes, Spices, Broth, and Water: Stir in the crushed tomatoes, bay leaf, dried basil, parsley, oregano, black pepper, red pepper flakes (if using), beef broth, and water. Mix everything together well.
  4. Bring to Boil and Add Pasta: Cover the pot and increase heat to bring the soup to a boil. Stir occasionally to prevent sticking. Once boiling, add the uncooked reginetti pasta or broken lasagna noodles and stir.
  5. Simmer the Soup: Reduce heat to medium and cook uncovered for half the time recommended on the pasta package (typically about 4-5 minutes), stirring occasionally to avoid sticking. The pasta should be slightly undercooked.
  6. Rest to Finish Cooking: Remove the pot from heat and let the soup sit uncovered for 5 minutes. The pasta will continue to cook and absorb the flavors of the broth.
  7. Serve: Remove and discard the bay leaf. Ladle soup into bowls and top with optional ricotta and grated Parmesan cheese. Enjoy!
