Ingredients

Scale

Steak and Potatoes

  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Fats and Oils

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil

Seasonings

  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste

Instructions

  1. Prep: Cut the Yukon gold potatoes and sirloin steak into ½ inch cubes, mince the garlic cloves, and gather the dried thyme, oregano, sea salt, and black pepper.
  2. Heat the skillet: Place a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of ghee to the pan, allowing the fats to melt and warm.
  3. Cook the potatoes: Once the ghee is melted, add the potato cubes to the skillet. Sprinkle the minced garlic, dried thyme, oregano, ½ teaspoon sea salt, and ¼ teaspoon ground black pepper over the potatoes. Let cook undisturbed for 2-3 minutes, then stir to begin browning. Continue to cook, stirring every 1-2 minutes, until potatoes are golden brown and fork tender, about 8-10 minutes. Be careful not to overcrowd the pan for best browning. Remove the potatoes and any browned bits from the pan and set aside.
  4. Sear the steak: Increase the heat to medium-high. Add the remaining two tablespoons of ghee to the skillet and melt it. Add the steak cubes to the pan and season with salt and pepper. Cook without stirring for at least 2 minutes to achieve a good sear, then stir and continue cooking for another 1-2 minutes until the steak is golden brown and cooked to your liking.
  5. Combine: Return the cooked potatoes to the skillet with the steak. Stir to mix everything evenly. Adjust seasoning with additional salt and pepper to taste. Optionally, garnish with freshly chopped parsley before serving.
  6. Serve: Plate the garlic butter steak bites and potatoes hot and enjoy the rich, savory flavors of this easy skillet meal.

Notes

  • Use a large cast iron skillet for the best sear and even cooking.
  • Cut potatoes uniformly to ensure even cooking and browning.
  • Do not overcrowd the pan while cooking potatoes or steak to avoid steaming instead of searing.
  • Adjust cooking times if using a different cut or thickness of steak.
  • Garnish with fresh parsley or additional herbs for extra flavor and color.
  • Leftovers can be reheated in a skillet over medium heat to retain crispiness.
