Ingredients

Scale

Steak Bites

  • 1 lb (450g) sirloin or ribeye steak, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Parmesan Cream Sauce

  • 1 tablespoon unsalted butter
  • 2 cloves garlic, finely minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Prep the steak: Pat your steak cubes dry using paper towels. Season them generously on all sides with salt and freshly ground black pepper to enhance the beef’s natural flavors and ensure a good sear.
  2. Sear the steak: Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the steak cubes in batches to avoid overcrowding the pan, and sear each side for 2 to 3 minutes or until browned and a crust forms. Remove the cooked steak from the skillet and set aside.
  3. Make the garlic butter: Lower the stove heat to medium. In the same skillet, melt the 3 tablespoons of unsalted butter. Add the minced garlic and sauté for about 30 seconds or until fragrant but not browned. Return the steak bites to the skillet and toss well to coat them evenly with the garlic butter.
  4. Prepare the Parmesan cream sauce: In a separate saucepan over medium heat, melt 1 tablespoon of unsalted butter. Add the finely minced garlic and sauté for 30 seconds until fragrant. Pour in the heavy cream and bring it to a gentle simmer. Stir in the freshly grated Parmesan cheese gradually until the sauce is smooth and thickened slightly. Season with salt, black pepper, and optional red pepper flakes to taste.
  5. Serve: Plate the garlic butter steak bites and pour the warm Parmesan cream sauce over them or serve the sauce on the side for dipping. Garnish with chopped fresh parsley for a burst of color and freshness. Serve immediately for the best flavor and texture.

Notes

  • Make sure to dry the steak cubes thoroughly before seasoning to achieve the best sear.
  • Cooking the steak in batches prevents steaming and ensures a crispy crust.
  • The Parmesan sauce can be made ahead and gently reheated before serving.
  • Adjust the cream sauce thickness by simmering longer to reduce or adding more cream if too thick.
  • This recipe pairs wonderfully with mashed potatoes, steamed vegetables, or crusty bread.
