Ingredients

Scale

Meatloaf Mixture

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (Panko works well)
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 egg, lightly beaten
  • 3 cloves garlic, minced
  • 1/2 small onion, finely diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Topping

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tbsp melted butter
  • 1 clove garlic, minced

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper to prepare for baking.
  2. Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan, shredded mozzarella, beaten egg, minced garlic, finely diced onion, Italian seasoning, salt, pepper, and chopped fresh parsley. Mix gently until just combined to avoid overworking the meat, which helps keep the meatloaf tender.
  3. Shape Meatloaf: Transfer the mixture into the prepared loaf pan or form it into a loaf shape on the lined baking sheet. Press down lightly to ensure even cooking throughout.
  4. Prepare Topping: In a small bowl, mix together the Parmesan cheese, breadcrumbs, melted butter, and minced garlic until well incorporated. Spread this mixture evenly over the top of the formed meatloaf for a flavorful, crispy crust.
  5. Bake Meatloaf: Place the meatloaf in the oven and bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the topping is golden and crispy.
  6. Rest and Serve: Remove the meatloaf from the oven and let it rest for 5 minutes before slicing. Garnish with additional fresh parsley if desired, then serve warm.

Notes

  • Be careful not to overmix the meat mixture to keep the meatloaf tender and moist.
  • You can substitute fresh parsley with dried parsley if fresh is unavailable, using 1 tablespoon dried.
  • Panko breadcrumbs provide a lighter texture, but regular breadcrumbs can be used as well.
  • Use a meat thermometer to ensure the chicken is fully cooked to 165°F for safety.
  • This meatloaf can be reheated and tastes great as leftovers.
