Ingredients

Scale

Garlic and Aromatics

  • 45 cloves garlic, minced or roasted
  • Optional: sautéed onions or shallots

Base Ingredients

  • 2 tbsp butter or olive oil
  • ¾ cup heavy cream, milk, or plant-based milk

Cheese and Seasonings

  • ¼ cup grated Parmesan or Pecorino cheese (optional)
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • Pinch of nutmeg (optional)
  • Fresh or dried herbs (thyme, basil, oregano – optional)

Vegan Options

  • Use almond, oat, or cashew milk instead of dairy
  • Omit cheese or use vegan Parmesan

Extra Cheese (Optional)

  • Add mozzarella, fontina, or more Parmesan for cheesier sauce

Instructions

  1. Prepare garlic and aromatics: Roast or sauté the minced garlic until fragrant. You may also optionally sauté onions or shallots to add depth to the flavor.
  2. Melt butter or heat oil: In a saucepan over medium-low heat, melt the butter or heat the olive oil gently, ensuring it doesn’t burn.
  3. Add garlic: Add the prepared garlic to the saucepan and cook for 1–2 minutes until aromatic, being careful not to brown the garlic to avoid bitterness.
  4. Add cream or milk: Slowly pour in the heavy cream, milk, or plant-based milk while whisking continuously to combine the ingredients smoothly.
  5. Incorporate cheese (optional): Gradually add grated Parmesan or Pecorino cheese, whisking constantly to thicken the sauce and enhance its flavor.
  6. Season: Add salt, black pepper, a pinch of nutmeg, and fresh or dried herbs such as thyme, basil, or oregano. Taste the sauce and adjust seasoning gradually to your preference.
  7. Blend (optional): For an extra smooth consistency, use an immersion blender to blend the sauce thoroughly.
  8. Adjust consistency: Thin the sauce with additional milk or broth if needed for a pourable texture, or simmer gently to thicken if using as a pizza base.
  9. Use immediately or store: Spread the sauce on pizza dough, drizzle over pasta, or refrigerate or freeze for future use.

Notes

  • For a vegan version, substitute dairy milk with plant-based milk and omit or replace Parmesan with vegan cheese.
  • Roasting the garlic mellows the pungency and adds a sweet flavor.
  • Do not let the garlic brown while cooking, as it will turn bitter.
  • Adjust the thickness by adding more milk or simmering longer depending on your intended use.
  • This sauce freezes well—store in an airtight container for up to 1 month.
  • Fresh herbs enhance flavor but dried herbs work well if fresh are not available.
