Instructions

  1. Cook the Beef: In a medium skillet over medium heat, brown 1 lb of ground beef until fully cooked and no longer pink, about 8–10 minutes. Drain excess grease, then add 1 packet of taco seasoning along with 1/4 cup of water. Stir to combine and simmer for 5 minutes until the seasoning is well absorbed and the mixture thickens slightly.
  2. Warm the Tortillas: Warm the flour tortillas to make them pliable either by heating them in a dry skillet over low heat for about 30 seconds per side or microwaving them covered with a damp paper towel for 20–30 seconds.
  3. Assemble the Burrito: Lay a warmed tortilla flat on a clean surface. Spread 1 cup of cooked white rice evenly over the center. Top with a generous portion of the seasoned beef mixture, followed by 1/2 cup of nacho cheese sauce, 1/4 cup of chipotle sauce, and 1/2 cup of sour cream. Finish with an even layer of shredded cheddar and mozzarella cheeses, about 1 cup combined, to ensure a gooey, cheesy filling.
  4. Grill the Burrito: Preheat a clean skillet over medium heat. Sprinkle approximately 2 tablespoons of shredded cheese onto the skillet. Place the burrito seam-side down onto the cheese to seal it against the skillet. Cook for about 3–4 minutes until the cheese melts and forms a crispy golden crust. Carefully flip the burrito and repeat on the other side, cooking until the second side is equally crisp and the cheese is melted. Use butter or oil in the skillet as needed to prevent sticking and enhance browning.
