Ingredients

Scale

Hamburger Steaks

  • 1.3 pounds ground beef
  • 4 tbsp breadcrumbs
  • 1 yellow onion (grated)
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp heavy cream
  • 1 egg

Sauce

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour
  • ½ cup low sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp chopped dill (plus more for serving)

Instructions

  1. Prepping the patties: Grate one yellow onion and place it in a large mixing bowl. Add the ground beef, breadcrumbs, salt, black pepper, heavy cream, and egg. Mix gently with your hands until all ingredients are just combined to avoid overworking the meat. Divide the mixture into 4 equal portions and shape each into a ball. Flatten each ball using your palm or a spatula to about ¾ inch (2 cm) thick. Set the shaped patties aside.
  2. Preparing aromatics: Finely dice the second yellow onion, mince the garlic cloves, and chop the fresh dill. These will be used later in the creamy sauce to build flavor.
  3. Searing the hamburger steaks: Heat the olive oil and unsalted butter in a large nonstick skillet over medium heat. Once hot, add the hamburger steaks and cook for 4-5 minutes on each side until nicely browned and cooked through. Remove the patties from the skillet and place them onto a clean plate, leaving any browned bits behind in the pan.
  4. Making the sauce base: Reduce the heat to low and add the diced onion and minced garlic to the same skillet. Cook gently for about 2 minutes, stirring, until fragrant and the onions soften. Season with salt and black pepper. Sprinkle in the flour and stir continuously until it’s fully incorporated with the onions and oil, forming a roux for thickening.
  5. Deglazing and simmering: Pour in the chicken broth, scraping the bottom of the skillet with a wooden spoon to lift up any flavorful browned bits. Let the mixture simmer for 2 minutes to reduce slightly and meld flavors.
  6. Finishing the cream sauce: Stir in the heavy cream and chopped dill, increase the heat to bring the sauce to a gentle boil, then reduce to a simmer. Cook for 1-2 minutes until the sauce thickens and becomes silky.
  7. Reuniting steaks with sauce: Return the hamburger steaks to the skillet, nestling them into the creamy dill sauce. Simmer for an additional 5-6 minutes, allowing the steaks to heat through and the flavors to meld, ensuring the meat is cooked to a safe internal temperature.
  8. Serving: Sprinkle additional chopped dill and freshly grated black pepper over the finished dish before serving. Enjoy the hamburger steaks warm with the luscious creamy dill sauce.

Notes

  • For best texture, do not overmix the meat when forming the patties to keep them tender.
  • Adjust seasoning to taste in the sauce, especially salt, depending on your broth’s saltiness.
  • You can substitute ground turkey or chicken for a leaner alternative, adjusting cooking times accordingly.
  • This dish pairs wonderfully with mashed potatoes, steamed vegetables, or buttered noodles.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
