Healthy Oatmeal Toddler Breakfast Cookies are a nutritious and delicious snack perfect for little ones. Made with wholesome ingredients like gluten-free rolled oats, ripe bananas, and unsweetened applesauce, these cookies provide a balanced mix of fiber, protein, and natural sweetness. They are easy to prepare, naturally gluten-free, and can be customized with your favorite nut butter for added flavor and healthy fats.

Ingredients

Scale

Dry Ingredients

  • 11/4 cup gluten free rolled oats
  • 1/4 tsp ground cinnamon

Wet Ingredients

  • 1 ripe medium banana, mashed (about 3.2 oz)
  • 1/4 cup unsweetened applesauce
  • 2 tbsp peanut butter or any nut butter (unsweetened recommended)
  • 1 egg (or 1 flax egg as substitute)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and set aside.
  2. Mix ingredients: In a medium bowl, combine the gluten-free rolled oats, mashed banana, unsweetened applesauce, peanut butter or any nut butter, egg, vanilla extract, and ground cinnamon. Stir thoroughly until all ingredients are well blended into a consistent batter.
  3. Form cookies: Using a cookie scoop or spoon, portion out cookie dough balls sized about 1 ½ to 2 tablespoons each. Place them spaced evenly on the prepared baking sheet. Flatten each ball gently with the back of the spoon or your fingers to approximately ½ inch thickness to ensure even baking.
  4. Bake: Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the cookies turn slightly golden around the edges. Keep a close eye to avoid overbaking.
  5. Cool and serve: Once baked, remove the cookies from the oven and transfer them to a wire rack or plate to cool completely before serving to toddlers to avoid burns and ensure best texture.

Notes

  • Use ripe bananas for natural sweetness and optimal moisture.
  • You can substitute the egg with 1 flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water) for a vegan option.
  • Ensure the nut butter is unsweetened and smooth to keep the cookies healthy.
  • Store the cookies in an airtight container for up to 3 days at room temperature or freeze for up to 1 month.
  • These cookies are ideal for toddlers but always supervise young children during eating.
