4.8 from 61 reviews

These homemade brown sugar cinnamon pop tarts are a delightful homemade twist on the classic toaster pastry. Made using store-bought pie crusts and a rich cinnamon-spiced brown sugar filling, they’re baked until golden brown and finished with a sweet cinnamon glaze. Perfect for a cozy breakfast or snack!

Ingredients

Scale

Pastry

  • 2 9-inch pie crusts (store-bought recommended)
  • 1 tbsp butter (melted, for brushing crust)

Filling

  • 1/2 cup dark brown sugar
  • 2 tbsp flour
  • 2 tbsp cinnamon (reduce to 1 tbsp for lighter cinnamon flavor)
  • 12 tbsp butter (melted, to achieve a slightly damp, coarse sand-like texture)

Cinnamon Glaze

  • 1/2 cup powdered sugar
  • 1 tsp cinnamon
  • 1 tbsp warm water (adjust between 12 tbsp to reach desired glaze consistency)

Instructions

  1. Preheat Oven: Set your oven temperature to 350°F (175°C) to ensure it’s ready when your pop tarts are assembled.
  2. Prepare Filling: In a bowl, combine the dark brown sugar, flour, cinnamon, and melted butter. Mix well until the mixture feels slightly damp, similar to coarse mild sand. Add extra butter if your brown sugar is dry to achieve this texture.
  3. Place Bottom Crust: On a baking sheet lined with parchment paper, lay down one of the 9-inch pie crusts.
  4. Butter Base Crust: Evenly brush 1 tablespoon of melted butter over the surface of the bottom pie crust to help the filling stick and add flavor.
  5. Spread Filling: Spoon the cinnamon brown sugar filling onto the buttered crust, leaving about a 1-inch border around the edges clear. Gently but firmly press the filling into the crust to pack it down.
  6. Add Top Crust: Place the second pie crust directly over the filling. Press the edges of the two crusts together and crimp the edges with a fork to seal them closed.
  7. Bake: Put the assembled pop tarts in the oven and bake for 20-25 minutes until golden brown. Around 10 minutes in, rotate the baking sheet if needed for even baking.
  8. Cool: Remove the pop tarts from the oven and let them cool completely for about 1 hour before glazing and cutting to avoid melting the glaze.
  9. Prepare Cinnamon Glaze: In a small bowl, mix together the powdered sugar, cinnamon, and warm water until smooth but not too runny. Adjust water quantity for the right consistency.
  10. Glaze Pop Tarts: Pour or drizzle the cinnamon glaze over the cooled top crust. Allow it to set before cutting to prevent smudging.
  11. Cut and Serve: Once the glaze is set, carefully slice the pop tarts into desired portions and enjoy your homemade treat!

Notes

  • If you prefer a lighter cinnamon flavor, reduce cinnamon in the filling from 2 tablespoons to 1 tablespoon.
  • Use store-bought pie crusts for convenience, but homemade crust can be substituted.
  • Make sure the filling is not too wet; adjust melted butter accordingly for perfect texture.
  • Allow pop tarts to cool completely before glazing to prevent the glaze from melting.
  • The glaze consistency should be pourable but thick enough to set nicely on top.
  • Rotate the baking sheet halfway through baking for even browning.
