Dough
- 2 cups flour
- 1 large egg
- 1/2 cup water
- 1 tsp salt
Filling
- 250g ground beef or lamb
- 1 grated white onion
- 1/3 cup minced parsley
- 1 tsp salt
- 1 tsp pepper
Yogurt Sauce
- 1 cup Greek yogurt
- 4 minced garlic cloves
- 1/2 lemon, juiced
- Salt and pepper to taste
Spiced Butter
- 1/2 cup butter
- 1 tbsp tomato paste
- 1 tsp paprika
- Pinch of red pepper flakes
- Prepare the dough (if making from scratch): In a bowl, combine water, egg, and salt. Gradually sift flour into the wet ingredients, mixing as you go. Pour the shaggy dough onto a clean surface and knead for 10-15 minutes until soft and smooth. If dry, wet your hands to continue kneading. Cover with a damp towel or plastic wrap and rest for at least 30 minutes to soften.
- Make the filling: In a bowl, mix the ground beef or lamb with the grated onion, minced parsley, salt, and pepper until fully combined.
- Roll and cut dough: Divide the rested dough into 4 sections. Work one section at a time, rolling it out as thin as possible. Cut into small squares using a knife or pizza cutter. Keep remaining dough covered to prevent drying.
- Fill and shape dumplings: Place a small amount of meat filling in the center of each dough square. Pinch the four corners together tightly to seal the dumpling and keep the filling enclosed. Repeat for all squares and filling.
- Boil dumplings: Bring a large pot of water to a boil. Add the dumplings carefully and cook for 8-10 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
- Prepare yogurt sauce: Combine Greek yogurt, minced garlic, lemon juice, salt, and pepper in a bowl. Mix well to create a tangy garlic sauce.
- Make spiced butter: In a saucepan over medium heat, melt butter. Stir in tomato paste, paprika, and red pepper flakes. Cook gently until aromatic and combined.
- Assemble and serve: Spread the garlic yogurt sauce on a serving plate. Place the cooked dumplings on top, then spoon the spiced butter over them. Garnish with fresh herbs if desired. Serve immediately and enjoy your homemade manti!
Notes
- If short on time, substitute homemade dough with wonton wrappers cut into quarters.
- Ensure dumplings are sealed tightly to prevent filling leakage during boiling.
- Resting the dough is essential for achieving tender and pliable wrappers.
- Adjust the spiced butter heat level by varying the amount of red pepper flakes.
- Fresh parsley or mint can be added as garnish for enhanced flavor and presentation.
