4.7 from 20 reviews

This Honey-Glazed Roasted Brussels Sprouts with Bacon recipe combines tender, caramelized Brussels sprouts with crispy thick-cut bacon and a sweet-savory glaze made from maple syrup, Dijon mustard, and balsamic vinegar. Perfect as a flavorful side dish, it balances the natural bitterness of the sprouts with the smoky, salty bacon and a hint of sweetness and spice.

Ingredients

Scale

For the Brussels Sprouts:

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bacon:

  • 6 slices thick-cut bacon, cut into 1-inch pieces

For the Glaze:

  • 1/4 cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting and caramelizing the Brussels sprouts and cooking the bacon evenly.
  2. Prepare Brussels Sprouts: In a large bowl, toss the trimmed and halved Brussels sprouts with olive oil, honey, salt, and black pepper until they are evenly coated. Spread them out on a baking sheet in a single layer for even cooking.
  3. Cook Bacon: Arrange the bacon pieces on a separate baking sheet, making sure they are spaced out to allow fat to render and bacon to crisp up during roasting.
  4. Roast: Place both baking sheets in the preheated oven and roast for 20 to 25 minutes. The Brussels sprouts should become tender with some caramelized, crispy edges, and the bacon should be browned and crispy.
  5. Make the Glaze: While roasting, whisk together the maple syrup, Dijon mustard, balsamic vinegar, and red pepper flakes (if using) in a small bowl until fully combined and smooth.
  6. Combine and Serve: Once the Brussels sprouts and bacon are done, transfer them to a large mixing bowl. Pour the glaze over them and toss gently but thoroughly to coat everything. Serve immediately while warm, enjoying the perfect balance of sweet, savory, and smoky flavors.

Notes

  • For a vegetarian version, omit the bacon and consider adding toasted nuts for crunch.
  • You can adjust the amount of honey and maple syrup to suit your preferred level of sweetness.
  • If you prefer your Brussels sprouts more crispy, feel free to roast for a few extra minutes, checking frequently to prevent burning.
  • Red pepper flakes are optional but add a nice subtle heat to the glaze.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
