Ingredients

Scale

Shrimp and Pasta

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces pasta (spaghetti, fettuccine, or your favorite type)

Sauce and Seasonings

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • 1 cup low-sodium chicken broth (or vegetable broth)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped for garnish

Instructions

  1. Cook the Pasta: Fill a large pot with water, add a generous pinch of salt, and bring it to a boil over high heat. Add the pasta and cook according to package instructions until al dente. Drain and reserve about 1 cup of the pasta cooking water. Set pasta aside.
  2. Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Season shrimp with salt and pepper, then sauté for 2-3 minutes per side until pink and opaque. Remove from skillet and set aside.
  3. Prepare the Sauce: In the same skillet, sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it. Add chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
  4. Add Cheese and Seasonings: Gradually whisk in the grated Parmesan cheese until the sauce becomes smooth and creamy. Stir in Italian seasoning, then season with salt and pepper to taste. Stir well, adjusting flavors as needed.
  5. Combine with Pasta and Shrimp: Add the cooked pasta and shrimp to the sauce, tossing until everything is evenly coated. If the sauce is too thick, gradually add reserved pasta water in small increments until desired consistency is reached.
  6. Serve: Plate the pasta and garnish with chopped fresh basil or parsley. Serve immediately while hot and enjoy your delicious shrimp pasta!

Notes

  • Use half-and-half instead of heavy cream for a lighter sauce.
  • Reserve pasta water to adjust sauce consistency perfectly.
  • To make it gluten-free, substitute the pasta with gluten-free noodles.
  • Fresh shrimp gives the best flavor, but frozen can be used in a pinch.
  • For extra heat, add a pinch of red pepper flakes when sautéing garlic.
