Instructions

  1. Prepare the Vegetables: Chop the onion, carrots, and celery roughly; precision is not necessary for this step.
  2. Boil the Broth with Vegetables: Add the chopped vegetables, broth, and Parmesan rind to a large pot. Heat on high until the mixture comes to a boil.
  3. Simmer Vegetables: Reduce the heat to low, cover the pot, and simmer for 15-18 minutes until the vegetables are tender.
  4. Puree the Vegetables: Remove the vegetables from the broth using a strainer. Transfer them to a blender along with ½ to 1 cup of the broth, or use an immersion blender in another pot, and blend until smooth. Be cautious when blending hot liquids to avoid splatters.
  5. Combine Puree and Cook Pasta: Pour the pureed vegetables back into the pot and add the pastina pasta. Simmer for 7-9 minutes until the pasta is cooked through and tender.
