Instructions

  1. Prepare the Equipment and Ingredients: Line a small, flat dish (about 13 x 18 cm) with non-stick baking paper to set the chocolate mixture. Place the chocolate sprinkles in a small bowl and set aside. Also line a baking tray with non-stick baking paper for the finished truffles.
  2. Heat the Cream and Melt the Chocolate: Pour the heavy cream and grated orange zest into a small saucepan. Heat over low heat until the cream is just below boiling point. Turn off the heat and add the finely chopped dark chocolate. Stir gently until the chocolate has completely melted and the mixture is smooth and glossy.
  3. Chill the Chocolate Mixture: Pour the chocolate mixture into the prepared dish and smooth it into an even layer. Place it in the refrigerator and chill for about 2 hours or until firm enough to handle and shape into balls.
  4. Shape the Chocolate Balls: Using a small ice cream scoop or teaspoon, scoop about 3 level teaspoons of the firm chocolate mixture and roll into small balls. If the mixture is too firm to roll, let it sit at room temperature for 5 to 10 minutes. Press the mixture slightly while rolling to make it compact. Keep cool your hands using an ice pack or frozen peas and dry your hands with paper towels as needed.
  5. Coat in Chocolate Sprinkles: Roll each chocolate ball in the bowl of chocolate sprinkles, ensuring even coating by moving the bowl around. Place each coated ball on the prepared baking tray lined with baking paper.
  6. Refrigerate and Store the Truffles: Refrigerate the coated truffles on the baking tray for at least 30 minutes or until firm. Store them in an airtight container in the refrigerator until ready to serve.
