Instructions

  1. Dissolve Jello: In a medium-sized bowl, add the lemon jello and carefully pour in the boiling water. Whisk until completely dissolved. Set the mixture aside to cool for about 20 minutes.
  2. Combine Cream Cheese and Pineapple: In a large bowl, add the softened cream cheese and crushed pineapple with juice. Using a hand mixer, start mixing on low speed and gradually increase to medium-high. Mix for about one minute until well combined, allowing small flecks of cream cheese to remain for texture.
  3. Add Cooled Jello Mixture: Pour the cooled but still liquid jello mixture into the cream cheese and pineapple blend. Using the hand mixer, start on low speed to avoid splashing and gradually bring up to medium speed. Mix until fully combined.
  4. Incorporate Whipped Topping: Add 12 ounces of whipped topping (Cool Whip) to the mixture. Mix with the hand mixer starting on low speed and gradually increasing to medium-high for about two minutes until well combined. The mixture will still be liquid but will firm up as it chills.
  5. Chill: Transfer the mixture to a large glass serving bowl or a 9×13 pan. Cover with cling wrap and chill in the refrigerator for at least four hours or until set.
  6. Serve: When ready to serve, add a dollop of the reserved 4 ounces of Cool Whip and garnish with fresh berries or your choice of fruit for a delicious presentation.
