Delicious and easy no-bake chocolate oatmeal bars featuring layers of buttery oats, rich peanut butter, and melted chocolate. Perfect for a quick treat or snack without turning on the oven.

Ingredients

Scale

Base and Oat Mixture

  • 1 cup butter
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats

Chocolate Peanut Butter Filling

  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Prepare Baking Dish: Line an 8-inch or 9-inch square baking dish with parchment paper, leaving overhangs on the sides to easily lift the bars out later. You may also use a 9×13-inch dish for thinner bars.
  2. Melt Butter and Sugar: In a large saucepan over medium heat, melt the butter and brown sugar together, stirring occasionally until the butter is fully melted and the sugar is dissolved. Remove from heat and stir in the vanilla extract.
  3. Add Oats: Mix the rolled oats into the butter and sugar mixture thoroughly to combine the ingredients evenly.
  4. Cook Mixture: Return the pan to low heat and cook the oat mixture, stirring continuously, for 3 to 4 minutes until well blended and heated through.
  5. Layer Base: Pour half of the oat mixture into the prepared baking dish and spread it out evenly, pressing down firmly to form a compact base layer. Reserve the remaining oat mixture for topping.
  6. Melt Chocolate and Peanut Butter: In a small microwave-safe bowl, melt the peanut butter and chocolate chips together in short increments, stirring until smooth to create a rich filling.
  7. Add Chocolate Layer: Pour and spread the melted chocolate-peanut butter mixture evenly over the oat base layer, reserving about 1/4 cup for drizzling on top.
  8. Top with Remaining Oats and Drizzle: Spoon the remaining oat mixture over the chocolate layer, pressing gently to form an even top layer. Drizzle the reserved chocolate mixture on top for decoration.
  9. Chill to Set: Refrigerate the bars for 2 to 3 hours or overnight until firm. Allow the bars to come to room temperature before slicing into portions.
  10. Final Texture Tip: The texture depends on how long you cook the sugar mixture. Cook too little, bars will be soft; cook too long, and they may turn dry or crumbly.

Notes

  • Using parchment paper with overhangs makes removing the bars easier after chilling.
  • You can substitute natural or crunchy peanut butter if preferred, but it may affect texture slightly.
  • For thinner bars, use a larger baking dish like 9×13 inches and adjust chilling time accordingly.
  • Store bars in an airtight container in the refrigerator for up to one week.
  • These bars are perfect for a quick no-bake dessert or snack without turning on the oven.
