Base Ingredients

  • 150g golden Oreo cookies (or plain/gluten-free biscuits)
  • 60g vegan/dairy-free cream cheese

Instructions

  1. Prepare Tray: Line a baking tray with greaseproof paper and set it aside to place the truffles on later.
  2. Crush Cookies: Place the golden Oreo cookies into a food processor or blender and pulse until they are crumb-like. Alternatively, crush them manually using a rolling pin.
  3. Mix Truffle Base: Transfer the cookie crumbs to a large mixing bowl and add the dairy-free cream cheese. Mix until the mixture is sticky and holds its shape when formed into balls.
  4. Shape Snowmen: With clean hands, weigh out roughly 20g of the mixture and roll into a ball. Then roll about 7g into a smaller ball and place it on top of the larger ball to form a snowman shape. Place these on the lined tray. Repeat until all mixture is used.
  5. Freeze Truffles: Place the tray into the freezer for around 20 minutes or until firm to the touch.
  6. Melt White Chocolate: About 5 minutes before the truffles are ready, melt the white chocolate in a heatproof bowl set over a saucepan of boiling water (bain-marie). Alternatively, melt it carefully in a microwave in short bursts.
  7. Coat Truffles: Remove the snowman truffles from the freezer and dunk them into the melted white chocolate, or balance them on a fork and spoon the chocolate over them to coat. Allow excess chocolate to drip back into the bowl. Repeat coating if a thicker layer is desired.
  8. Set Coating: Place the coated truffles back onto the lined tray and return to the freezer for 5-10 minutes to allow the chocolate to set firmly.
  9. Prepare Decorations: Tint some leftover melted white chocolate with black and orange food gels separately. Transfer each into piping bags with small snipped tips.
  10. Decorate Snowmen: Pipe orange carrot noses, then add black eyes, mouths, and buttons on each snowman truffle using the tinted chocolate.
  11. Add Scarves: Cut strawberry lace sweets to size and wrap them around each snowman’s neck like a scarf. Optionally, use a dab of melted white chocolate to secure the scarves in place.
  12. Final Set: Return the decorated truffles to the freezer for an additional 5 minutes to set all decorations firmly.
