Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground ginger (or freshly grated ginger)
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup honey (preferably raw or natural)
  • 1/4 cup orange juice (freshly squeezed)
  • 1 tablespoon orange zest
  • 2 large eggs
  • 1/4 cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh grated ginger (optional for extra spice)

Instructions

  1. Preheat the Oven and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour your cake pans or line them with parchment paper for easy removal after baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, ground ginger, cinnamon (if using), and salt. Set aside.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the honey, freshly squeezed orange juice, orange zest, eggs, vegetable oil or melted butter, and vanilla extract until smooth. If using fresh grated ginger for extra spice, add it to this mixture.
  4. Blend Wet and Dry Ingredients: Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the cakes tender and light.
  5. Divide Batter and Bake: Pour the batter evenly into prepared cake pans. Tap the pans gently to level the batter evenly. Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean and the cakes are golden brown.
  6. Cool the Cakes: Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely before serving or decorating.

Notes

  • For stronger ginger flavor, use fresh grated ginger and increase up to 2 tablespoons.
  • If you prefer a richer taste, substitute vegetable oil with melted butter.
  • These cakes keep well stored in an airtight container for up to 3 days at room temperature or in the fridge for up to a week.
  • Serve plain or with a dollop of whipped cream or a drizzle of additional honey.
  • Make sure not to overmix the batter to keep the cake light and fluffy.
  • You can use gluten-free flour blend to make the recipe gluten-free, but baking times may vary slightly.
