  • 1/2 teaspoon sriracha

Instructions

  1. Cook noodles: Boil the wide Lo Mein noodles according to package instructions until tender, then rinse them under cold water to stop cooking. Set aside.
  2. Brown pork and onions: Heat peanut oil in a large skillet over medium-high heat. Add ground pork and 1/4 cup of the sliced green onions. Cook, stirring and breaking up the pork, until browned and cooked through.
  3. Prepare the sauce: In a bowl, whisk together low-sodium chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until combined.
  4. Add ingredients to skillet: Stir in the cooked noodles, coleslaw mix, and the prepared sauce into the skillet with the browned pork.
  5. Toss and cook: Toss everything together and cook for 2 to 3 minutes on medium heat until the noodles and greens are well coated and heated through.
  6. Garnish and serve: Remove from heat and garnish with the remaining 2 tablespoons of sliced green onions before serving for added freshness and crunch.
