For the Tarts
- 200g prosciutto, torn into strips
- 1 brown pear, cut into matchsticks
- 125g brie, cut into pieces about 5mm thick and 2cm long
- 3–4 sheets puff pastry
- 1 egg, beaten (for brushing)
- Preheat Oven: Set your oven to 190°C (374°F) and lightly spray the tartlet tray with olive oil to prevent sticking.
- Prepare Pastry Shells: Gently press square-cut pieces of puff pastry into the tartlet moulds, ensuring they fit snugly without stretching.
- Add Prosciutto: Place a few torn strips of prosciutto at the bottom of each pastry shell for a savory base layer.
- Add Pear: Arrange matchstick-cut brown pear pieces on top of the prosciutto to add a hint of sweetness and texture.
- Add Brie: Layer the sliced brie pieces over the pear, allowing the cheese to partially melt during baking.
- Brush Edges: Using the beaten egg, brush the exposed edges of the puff pastry to achieve a golden brown finish.
- Bake: Place the tartlet tray in the preheated oven and bake for 20-25 minutes until the pastry is puffed up, golden, and crisp.
- Cool and Serve: Remove the tarts from the oven and allow them to cool slightly before serving to let the flavors meld and the cheese settle.
