Ingredients

Scale

For the Tarts

  • 200g prosciutto, torn into strips
  • 1 brown pear, cut into matchsticks
  • 125g brie, cut into pieces about 5mm thick and 2cm long
  • 34 sheets puff pastry
  • 1 egg, beaten (for brushing)

Instructions

  1. Preheat Oven: Set your oven to 190°C (374°F) and lightly spray the tartlet tray with olive oil to prevent sticking.
  2. Prepare Pastry Shells: Gently press square-cut pieces of puff pastry into the tartlet moulds, ensuring they fit snugly without stretching.
  3. Add Prosciutto: Place a few torn strips of prosciutto at the bottom of each pastry shell for a savory base layer.
  4. Add Pear: Arrange matchstick-cut brown pear pieces on top of the prosciutto to add a hint of sweetness and texture.
  5. Add Brie: Layer the sliced brie pieces over the pear, allowing the cheese to partially melt during baking.
  6. Brush Edges: Using the beaten egg, brush the exposed edges of the puff pastry to achieve a golden brown finish.
  7. Bake: Place the tartlet tray in the preheated oven and bake for 20-25 minutes until the pastry is puffed up, golden, and crisp.
  8. Cool and Serve: Remove the tarts from the oven and allow them to cool slightly before serving to let the flavors meld and the cheese settle.

Notes

  • For best results, use cold puff pastry straight from the fridge to ensure optimal puffing.
  • If you prefer a crispier pear texture, add it just before baking; for softer pear use, layer it under the brie.
  • These tarts are best served warm but can be reheated gently before serving.
  • Substitute prosciutto with serrano ham or smoked ham for variation.
  • Can be prepared ahead and refrigerated, then baked fresh when needed.
