These Rice Krispie Treat Ghosts are a fun and festive Halloween treat made by combining classic Rice Krispies cereal with melted marshmallows and white chocolate, shaped into playful ghost figures and decorated with dark cocoa candy melt eyes. Perfect for parties or spooky celebrations, these treats are easy to make and irresistibly delicious.

Ingredients

Scale

For the Ghost Treats

  • 7 cups Rice Krispies Cereal
  • 6 tablespoons salted butter
  • 16 ounces mini marshmallows
  • 6 ounces white candy melts or white chocolate chips

For the Eyes

  • 2 ounces dark cocoa candy melts

Instructions

  1. Melt Chocolate Eyes: Melt the dark cocoa candy melts in the microwave using 30 second bursts on high power, stirring thoroughly after each burst until smooth.
  2. Pipe Eyes: Pour the melted chocolate into a small zip-top bag, snip off a tip, and pipe 24 small teardrop-shaped eyes onto a parchment paper-lined baking sheet.
  3. Harden Eyes: Freeze the piped eyes for about 3 minutes to harden them, then remove and set aside at room temperature until needed.
  4. Prepare Cereal Base: Spray a large mixing bowl with baking spray and add the Rice Krispies Cereal, then set the bowl aside.
  5. Melt Butter and Marshmallows: Cut the butter into small pieces and place them in a medium-large saucepan. Set over low heat and stir in the mini marshmallows and white candy melts or white chocolate chips.
  6. Combine Ingredients: Stir the mixture often until about 75% of the marshmallows and white chocolate have melted, then remove from heat. Stir vigorously until the mixture is completely smooth and melted.
  7. Mix Cereal: Pour the melted marshmallow mixture over the Rice Krispies Cereal and stir until the cereal is thoroughly coated.
  8. Cool Mixture: Allow the coated cereal mixture to cool for a few minutes until it is cool enough to handle comfortably.
  9. Shape Ghosts: Pinch off twelve portions, about 1/2 cup each. Roll each portion into a ball, then shape the balls into cones by pinching the tops into points. Curve these points to form cute ghost shapes.
  10. Add Eyes: Press two hardened chocolate eyes onto each ghost shape. If the eyes don’t stick, use some melted candy melts as glue to attach them.
  11. Set Treats: Allow the ghost-shaped treats to dry at room temperature for about an hour to set before packaging in bags or boxes.

Notes

  • Use a baking spray on the mixing bowl to prevent the cereal mixture from sticking.
  • If you prefer, substitute the white candy melts with white chocolate chips for a slightly different flavor.
  • Be careful when handling the melted mixture as it can be hot.
  • These treats are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • For a gluten-free option, ensure that the Rice Krispies cereal used is certified gluten-free.
