Instructions

  2. Prepare Sweet Potatoes: Peel and cut two medium sweet potatoes into roughly one-inch cubes for even roasting.

  6. Slice Sausage: While sweet potatoes roast, slice the pre-cooked sausage into approximately 3/4-inch thick pieces. Trim ends as needed to ensure flat sides for even cooking.
  7. Add Sausage to Roasting Pan: After the sweet potatoes have roasted for 15 minutes, remove the sheet pan and arrange the sausage slices on the pan. Roast for an additional 10 minutes.
  8. Prepare Broccoli: Cut the broccoli into pieces about the same size as the sweet potatoes and sausage. Toss the broccoli in the remaining oil-balsamic dressing in a bowl.
  9. Combine Ingredients: Remove the sheet pan from the oven, turn the sausage slices over, and spread out the sweet potatoes and sausage pieces. Nestle the broccoli pieces between them evenly on the pan.
  10. Final Roast: Return the sheet pan to the oven and roast for a final 15 minutes, or until the broccoli is tender to your liking and the sausages and sweet potatoes are nicely browned.
  11. Season and Serve: Once roasted, season everything with salt and fresh ground black pepper to taste. Serve immediately while hot.
