Ingredients

Scale

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 ½ teaspoons salt
  • ½ teaspoon active dry yeast

Wet Ingredients

  • 1 ¼ cups warm water (110°F/45°C)
  • 2 tablespoons olive oil

Flavorings

  • 2 tablespoons fresh rosemary, chopped
  • 2 cloves garlic, minced

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the flour, salt, and yeast. Stir in the chopped rosemary and minced garlic. Gradually add the warm water and olive oil, mixing until a sticky dough forms. Cover the bowl tightly with plastic wrap and let it rest at room temperature for 12 to 18 hours to allow fermentation and flavor development.
  2. Shape the Dough: After the long rest, the dough will be bubbly and soft. Lightly flour a clean surface and gently turn out the dough. Shape it into a round loaf by folding it minimally to preserve the airy texture, handling the dough carefully.
  3. Second Rise: Place the shaped dough on a piece of parchment paper and let it rise for 30 to 40 minutes while you preheat your oven to 450°F (230°C). Place a Dutch oven inside the oven to heat up simultaneously, which will help achieve a crisp crust.
  4. Bake the Bread: Carefully remove the hot Dutch oven from the oven and transfer the dough along with the parchment paper into it. Cover with the lid and bake for 30 minutes. Then, remove the lid and continue baking for an additional 10 to 15 minutes until the crust turns a deep golden brown.
  5. Cool and Serve: Remove the bread from the Dutch oven and allow it to cool on a wire rack for at least 10 to 15 minutes. Cool sufficiently before slicing, then serve warm with butter or a drizzle of olive oil for dipping.

Notes

  • Make sure water is warm but not hot to avoid killing the yeast.
  • The long fermentation time develops the dough’s flavor without kneading.
  • If you don’t have a Dutch oven, bake the dough on a baking stone or sheet and use a pan of water in the oven to create steam.
  • Store leftover bread wrapped in a cloth at room temperature for up to 2 days or freeze for longer storage.
  • For a stronger garlic flavor, you can lightly sauté the garlic before adding to the dough.
