Ingredients

Scale

Sausage and Protein

  • 12 oz cooked sausage (such as cajun sausage, andouille sausage, or smoked sausage)

Vegetables

  • 2 cups corn kernels (from 3 ears, cooked)
  • 1 large red bell pepper, diced
  • 1 large zucchini, sliced

Seasoning and Oil

  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Cook sausage: Heat 1 tablespoon of olive oil in a cast-iron skillet over medium heat. Slice the cooked sausage into coins and add them to the skillet. Cook for 5 minutes on one side, then flip and cook for an additional 3 minutes. Remove the sausage from the skillet and set aside on a large plate, leaving the sausage oil in the pan.
  2. Prepare bell pepper: In the same skillet with some of the reserved sausage oil (add if needed), add the diced red bell pepper. Cook on medium heat for about 4 minutes until slightly softened. Remove the bell pepper and place it on the plate with the sausage.
  3. Cook zucchini: Using the same skillet, add some reserved oil if necessary, then add the sliced zucchini. Cook on medium heat for about 3 minutes until tender but still crisp.
  4. Prepare corn: Slice the corn kernels off the cob using a knife, then set aside.
  5. Combine and season: Return the cooked sausage, bell pepper, zucchini, and corn kernels to the skillet. Mix well, adding the reserved sausage oil to enhance flavor. Sprinkle with 1/2 teaspoon chili powder and gently reheat everything on low heat until warmed through.
  6. Finish and serve: Remove the skillet from heat and garnish the dish with freshly chopped cilantro. Serve immediately.

Notes

  • The sausage is often salty, so taste before adding extra salt.
  • Cooking times may vary depending on your stove and skillet size.
  • Using a cast-iron skillet helps develop flavor and even cooking.
  • Feel free to swap the vegetables based on seasonality or preference.
  • This recipe works well with pre-cooked or leftover sausage for convenience.
